Marinated Tomatoes with Burrata and Balsamic Glaze

Fresh, refreshing, delicious and low carb!

If you are lucky enough to have these tomatoes as a left over, then you will be so happy because they can be used in so many other recipes! I love these marinated tomatoes and adding the burrata and balsamic glaze really makes it.

One of my favorite ways to eat this is making a taco out of the tomato and then stuffing it with the burrata. :)

On the marinade time, I would really suggest the 24 hours, overnight. But 6 hours can be okay too.

Servings: 8

Time cook: 24 hour marinade, 20 minute prep

Ingredients

  • 4 slices of large tomatoes

  • 2 to 3 cloves of garlic, minced 

  • 1 bunch of fresh parsley, chopped

  • 1 bunch of fresh Basil, chopped 

  • 1 shallot, minced 

  • 1/3 cup of olive oil 

  • 1/4 cup of red wine vinegar 

  • salt and pepper to taste 

Directions: add all ingredients to a bowl with tomatoes and marinate overnight. Serve next day with burrata and fresh Basil, balsamic glaze
