Crispy Proscuitto Basil Trofie

This crispy basil proscuitto pasta recipe is very easy to make, and you can also play around with it a little bit! You can definitely sub for a traditional spaghetti pasta, but I just enjoy the choice of the trofie because it was short and easier to eat with a bite of that prosciutto, asparagus, ricotta, and more!

If you aren’t an asparagus fan you can also sub for spinach, peas or another green. I also definitely am a cheese person so if you are the same adding some more ricotta and parmesan never hurt anyone. For the pest infused oil if you don’t have no worries, I would suggest adding more basil and more CHEESE then, hehe.

Servings: 4-6

Time cook: 40 minutes

Ingredients

  • 1 package of prosciutto, sliced 

  • 1 bunch of asparagus, chopped

  • 1 sprig on green onion, white and green parts separated 

  • 1 package of trofie pasta

  • 2 garlic cloves, minced

  • 1 tablespoon of dried oregano 

  • Few dashes of thyme

  • Few dashes of pepper 

  • Few dashes of tarragon 

  • Squeeze of one lemon and slice to garnish

  • 2 tablespoon of pesto infused olive oil

  • 1 tablespoon of butter 

  • Few dashes of red pepper flake

  • 3-4 tablespoon of part-skim ricotta 

  • Fresh Basil, split to garnish 

  • Fresh parsley to garnish 

  • 1/3 cup Parmesan, split save to garnish 

Directions: In a large non-stick sautee pan add half the oil and then the green onion. While this is getting started boil a large pot of water with salt for the pasta so you can cook at the same time. Cook for a minute or so on medium heat then add the garlic and asparagus. Cook for about 5 minutes, then all add the seasonings and cover. Cooker for another 5 minutes. or so. remove lid and add the proscuitto, half basil, squeeze of half lemon, butter. and cover and cook for about 10 minutes on medium low.

Then remove and turn heat to low till pasta is ready. Once the pasta is ready transfer to pan and add remaining olive oil, parmesan, red pepper flake, rest of green onion and parsley and toss. Garnish with the fresh basil, more parmesan, lemon slice, and the ricotta. enjoy!
