Homemade Pasta
Nothing beats fresh pasta, simple and delicious goes a long way.
Who doesn’t love fresh pasta? There is definitely something about homemade pasta that is different from store-bought. I am all about the convenience of store-bought, but if you have time to do it, do it you will be glad you did! I have made this recipe for numerous pasta dishes, simple as spaghetti or something more spring flavors like lemon feta. Have fun, explore some ideas for your toppings.

I use the pasta attachment for my kitchen aid mixer, it honestly makes pasta making so easy, not any less messy but definitely easier.
3 eggs
2 cups of All-Purpose Flour
1 tablespoon of Tuscan Herb Olive Oil
Dash of salt
Mix flour water and olive oil together. in a medium bowl ( I use the kitchen aid to mix it but you can hand mix as well). Once mixture is mixed well knead it for about 5-7 minutes. Then, let it sit for about 30 minutes at room temperature and cover with plastic wrap.
Before you start rolling out your pasta, start to boil water with a sprinkle of salt, high heat.
In order to cut to make noodles, Add your pasta roller attachment to the kitchen aid. So you cut your pasta into sheets and start to roll it out with the rolling attachment. It is going to become VERY long, you might want to cut it in half. Each sheet should go through roller at least 3 times.
Then, it is time to add in the noodle attachment of your choice. Once the noodles are cut to your pasta style choice you cook in the boiling water. It should only take about 3-5 minutes, but cook to how you like al dente or soft. Then add your pasta sauce, or whatever you are wanting with your fresh pasta! Bon appetite!
