Veggie Pad Thai
Let’s get saucy with this thai dish.
Oh how I love this dish, and hope you will too! I really think the sauce makes this dish, it does have a decent amount of heat so reduce the amount of chilli paste in the sauce to cool down the heat if you are sensitive or not a fan of spicy. And if you are a fan of extra spicy add a jalapeno to the veggies section and add more chilli paste.

I hope you enjoy this recipe! You can of course add chicken or shrimp but honestly with the noodles, peanut butter and eggs you will find your self happy full and hopefully with a happy belly! If you don’t have a wok, you can use a griddle to cook the egg and then toss the pad Thai together, that is how I cook this dish.
1 Zucchini, slivered like wide noodle
2 Carrots, slivered like wide noodle
1/2 Red Bell Pepper, chopped
1 Yellow Onion, sliced thinly
4 oz brown rice noodles
1 bunch of cilantro
2 Eggs
1 tablespoon of garlic, minced
Pepper to taste
Olive oil
Peanuts, add to garnish
Lime slices to garnish
Green onion chopped to garnish
Sriracha and hoisin sauce on side, optional
Sauteed basil to garnish, optional but I love adding fresh crispy basil to this dish
The Sauce
1/2 tablespoon of garlic, minced
1/2 tablespoon of minced ginger
1/2 cup of peanut butter
1/4 cup of soy sauce
1/2 tablespoon of chili paste or siracha
1 tablespoon of sugar
2 tablespoons of rice vinegar
2 1/2 tablespoons of sesame oil
A dash of fish sauce
For the sauce, add all ingredients into a blender and blend until smooth. Set aside. For everything else, start to sautee the onion and olive oil. Once the onion is translucent add the garlic. Then add the red bell pepper, carrot, zucchini, and sautee until veggies are softened, sprinkle with pepper.
Heat up your griddle and start to cook the brown noodles according to the package. Once the griddle is hot put your veggies on the side and make a hole in the middle for the two eggs to go in and cook. Add the eggs and cook through. Once eggs are done start to toss with veggies, then add noodles and sauce.
Once everything is mixed well, it is ready to serve! Be sure to add your garnishes. :)
