Healthyish Spaghetti
What would life be without pasta!
For this spaghetti recipe I definitely put quite a but of garlic in, I am a garlic lover so if you are not tone down the amount. Also, I LOVE using infused olive oils, it really does elevate a dish and adds to the flavor.
For the sauce I also like to cook for at least a couple hours, the longer you cook it the. more the flavors will develop. Move love means more deliciousness. It is also vegetarian! You can feel free to add some turkey meatballs if you’d like and it would still be relatively healthy. I just think a simple dish is a good balance to have during the weekdays and it is easy with busy schedules. I will server bread on the side for my husband since I know he like’s the extra carbs but you can add a salad on side as well if you want!

This spaghetti recipes feed about 3 people.
1 fresh tomato, roasted
1/2 bulb of garlic, roasted
I just roast the whole bulb and use leftovers towards another dish
2.5 oz of organic tomato paste
1 4oz can of organic tomato sauce
1 8oz can of organic crushed tomatoes
1 teaspoon of oregano
5 fresh basil leaves, roasted
Dash of rosemary
Dash of pesto infused olive oil
1 teaspoon of thyme
Salt and pepper to taste
Parmesan to garnish
Parsley to garnish
Red pepper flake to garnish
Fresh basil to garnish
Chickpea spaghetti noodles
In a saucepan add the tomato paste, sauce, tomato paste, oregano, salt and pepper, thyme. Then turn the oven to 375 F. On a sheet of aluminum on a pan add the tomato, garlic, and basil leaves. Season with olive oil, salt and pepper. Try to cover over the garlic if you can. Cook for about 10 minutes then pull out basil leaves and add to spaghetti sauce. Then leave the garlic and tomato for about 30 minutes, until nice and roasted.
Then, cook the sauce for at least an hour on low to allow the flavors to develop, longer the better. Bring another pot of water to boil once you are getting about 20 minutes till you want to serve, sprinkle with salt and once at a boil add noodles and cook accordingly. Transfer noodles into a large sauce pan and pour the sauce over and toss. Garnish with parsley, red pepper flake and parmesan!
