Bacon-Wrapped Mini Turkey Loafs

For this meatloaf recipe, you can always opt to do normal breadcrumbs or panko, I also have done without but it really does help keep the meatloaf bound together. You can also remove the bacon for a healthier option and just have ground turkey, but I can’t help myself! Especially if I have leftover bacon, definitely need to put it to some good use.
Tip: When you are forming meat loaves it is better to have put a little water on your hand, if you try to form with dry hands it will get super sticky and harder to form the loaves.

This bacon-wrapped mini turkey loaf makes 3 loaves.
3 slices of peppered bacon, cut in half
1 lb of organic ground turkey meat
2.5 oz of organic tomato paste
2 tablespoons of ketchup
dash of light brown sugar
1 teaspoon of oregano
1 teaspoon of basil
Dash of pesto olive oil
1 tablespoon of butter
1 tablespoon of minced garlic
2 tablespoons of gluten-free panko
1 teaspoon of salt
2 teaspoons of pepper
1 teaspoon of thyme
1/4 cup of parmesan, shredded
Squeeze of half lemon
1 egg
Parsley to garnish
In a bowl whisk together the brown sugar, ketchup, and tomato paste. In another bowl add all the seasonings, egg, bread crumb, parmesan, dash of pesto olive oil, squeeze of lemon, and ground turkey meat. Mix well.
Pre-heat oven to 375 F. Once the bowls have been mixed. Form three mini meat loafs into a baking dish, grease pan with olive oil. Add the mixed sauce on top, then add the strips of bacon on top, then use the rest of the sauce on top of the bacon. Once this is complete, bake the mini meat loaves for 25-30 minutes, uncovered, then turn up to 400 F for turn more minutes to crisp up the bacon. Once the mini loaves are done sprinkle with parsley, either dried or fresh will work nicely!
