Creamy Zucchini Chicken & Skinny Noodles

Trying to cut carbs but missing pasta?

Then this recipe is for you! As much as I love carbs, I definitely take them in moderation, so when missing a classic dish using a low carb noodle alternative is magic! I use this brand called skinny noodles, and they are great! Also, you could do spaghetti squash if you wanted to as a noodle replacement for this dish as well.

Time cook: 1 hour, 6-hour marinade

Ingredients

  • 1 lb of chicken breast, cut into strips and marinated in avocado oil, Italian seasonings, salt, and pepper. Marinate 6+ hours

  • Two packs of fettuccine skinny noodles

  • 1 large zucchini, chopped,

  • Three green onions sprigs, chopped

  • 3 close of garlic, minced

  • avocado oil to coat the pan

  • 1/3 cream cheese (I used chive and onion)

  • 1/3 cup of greek yogurt

  • 1/3 cup of fresh mozzarella, shredded

  • 1/4 cup of grated parmesan

  • 2 tablespoons of chicken bone broth

  • 2 tablespoon of pesto sauce

  • few dashes of Italian seasoning

  • Salt and pepper to taste

  • Garnish with parsley, red pepper flake and more grated parmesan.

Directions: Air fry chicken at 375 ° for 18-20 minutes. Set aside. In a large no-stick pan add the oil, green onion and garlic, and cook on medium heat for 5 minutes. Then add the zucchini till slightly brown on both sides. Once cooked, slowly add in all other ingredients except the noodles. Once the sauce has cooked down, add the chicken d noodle and toss. Serve with garnishes.
