Slow Cooked Pull Pork Stew

This slow-cooked pull pork stew was delicious! Hearty and healthy, perfect for leftover pull pork. There is just something about stews and a slow cooker during the fall or winter seasons that you just crave, and this recipe is sure one of those. I love being able to use leftovers and make them into something completely new.

If this recipe isn’t spicy enough you can leave in more of the jalapeno seeds or add in some hot sauce to kick it up a notch.

Time cook: 3 hours

Ingredients

  • 2 1/2 cups of left over pull pork 

  • 1/2 cup of frozen corn  

  • 3 medium jalapeños, diced and seeded

  • 1/2 onion, chopped 

  • 2 garlic cloves 

  • 1 cup of beef broth

  • 1 28oz can of crushed tomatoes 

  • 1 12oz of tomato purée 

  • 1 15oz can of black beans, drained 

  • few dashes of thyme

  • few dashes of cumin

  • few dashes of smoked paprika 

  • few dashes of chili powder 

  • salt and pepper to taste 

  • garnishes: cheese, cilantro, Greek yogurt, green onion, avocado 

Directions: In a slow cooker add all ingredients and cook in low for about 3 hours! Garnish and enjoy
