Mediterranean Shrimp Kabobs

You are going to love these shrimp kabobs, and it is so easy to make!

These kabobs are perfect for any night of the week! You can change it up and put them on the grill if you prefer since this is an air fryer recipe, but we used our air fryer since it was too chilly outside to use the grill.

I also marinate the shrimp in its marinade for about 24 hours and it honestly made a difference! The way the seasoning and greek yogurt stay like a coating on the shrimp adds another depth or flavor that we loved! There are a few suggestions below on some different garnishing options you can choose from as well. This recipe only feeds two so double it up if you have more mouths to feed.

Ingredients

  • Shrimp marinade

    • A little over half a pound of shrimp

    • 1/2 cup of Greek yogurt 

    • 1/4 cup olive oil 

    • Mediterranean seasoning, I use sadaf you can of course use another or make your own

  • Kabobs

    • marinated shrimp 

    • Olive oil

    • 1 red bell pepper, sliced into wedges

    • 1 yellow bell pepper, sliced into wedges

    • 1 small red onion, sliced into wedges

    • 1/2 jalapeno, sliced into wedges

    • Salt and Pepper, about a teaspoon each

    • Garlic and plant base butter mix

    • Dill to garnish, optional

    • Chile Garlic Crisp Asian Everything Sauce to garnish, optional

  • Green Goddess Dressing

    • 1 cup of Greek yogurt 

    • 2 tablespoons of honey 

    • 1 tablespoon of red wine vinegar 

    • 2 garlic cloves, minced

    • 2 tablespoons of olive oil

    • 2 tablespoons of water 

    • 1 cup of cilantro 

    • 1/3 jalapeƱo 

    • 1 teaspoon of onion powder 

    • Salt and pepper to taste 

    • 1 small lemon, squeezed

Directions: peel and devein your shrimp. Add the yogurt, olive oil, and seasoning for the shrimp. Marinade for 24 hours. For the green goddess dressing add all ingredients into a blender. Blend until smooth and set aside.

Soak your wooden sticks for the kabobs in water for an hour. While these are soaking start to cut your veggies into wedges and then put them into a bowl. Add the melted butter and garlic, toss then season with salt and pepper.

Pull out to the shrimp and turn your air fryer to 375 F. Now it is time to layer your kabobs! Just mix veggies and then put 3 shrimps in between shrimps on one stick. Once these are done, cook into air fryer. spray fryer with olive oil and cook kabobs for 10-12 minutes until nice and golden brown. I like it when they get a little charred because it adds some crunch so I go the full 12.

Once the kabobs are cooked drizzle the green goddess dressing, drizzle asian sauce, and add dill weed.
