Lamb Meatballs

How do you prefer your lamb meatballs, in a pita, over salad, or how about both?!

These lamb meatballs were so yummy and loved the salad and pita combo! Great for someone trying to cut on carbs or if you have someone in your family that needs them, either way both options are a crowd please.

Tip: You can always sear the meatballs and then bake them or use air fryer to be quicker, but it is so nice if you have a busy day to just throw them in the slow cooker and turn out 100%.

Servings: 3

Time cook: 5-7 hours slow cooker (high to low)

Ingredients

  • Lamb Meatballs

    • 1 lb of ground lamb

    • 1 egg

    • 1/4 cup of Italian bread crumbs

    • 1/4 onion, minced

    • few dashes of olive oil

    • few dashes of salt and pepper (generous)

    • few dashes of dill

    • few dashes of oregano 

    • few dashes of thyme

    • few dashes of tarragon 

    • 3 cloves of garlic, minced

  • Tzatziki Sauce

    • 1 garlic clove

    • 1/2 cup of greek yogurt

    • 1 lemon squeezed

    • 1/3 cup of fresh dill, chopped

    • 1 english cucumber, chopped

    • salt and pepper to taste

    • Dash of cumin

    • Dash of nutmeg

  • Pita/Salad Recommendations

    • 4-5 pitas

    • 1 head of romaine

    • 8 oz. of feta

    • 1/2 english cucumber, chopped.

    • 3 tomatoes

    • fresh dill

    • Shallot, or red onion chopped

    • garlic chili paste

    • tator tots or fries

Directions: For the sauce, add all ingredients in a bowl and mix. Set aside. In a bowl for the meatballs add all the ingredients and mix. Best mixed with spoon first then hands. Mix all ingredients and form into the size of a golf ball. In slow cooker coat bottom about 1/4 inch of oil and cook on high (4-5 hours) or low (7 hours).

About half way cooking turn over meatballs. Once meatballs are done assemble and enjoy!
