Jumbo Pizza Rolls

A perfect weekday dish FULL of flavor and enough to fill some bellies!

If you grew up eating pizza rolls then this recipe is for you! I can’t help it but one of my favorite old school snacks is pizza rolls, but if you look at the actual ingredients of them they are terrible for you so I thought why not make your own so when you do get those late. night cravings at least you know this option is healthier and you know all the ingredients in them!

I absolutely love the pepperoni one, but you can play around with the fillings. Can try out a Hawaiian filling, just cheese, or a meat trio with sausage and bell pepper! I also used a yogurt ranch to dip in but you can use whatever you want to dip the rolls in. NOTE: These are freezer friendly so make a bunch so you can freeze some and enjoy later.

Ingredients

  • 2 cups of mozzarella cheese, freshly shredded

  • 3/4 lb of fresh pepperoni

  • 1 1/2 cup of homemade marinara sauce or store bought

    • I usually freeze my homemade marinara sauce and used this to make these

  • 10 egg roll wrappers

  • Rice Bran Oil for frying

  • Few dashes of oregano

  • Few dashes of thyme

  • Italian infused olive oil

  • Fresh grated parmesan to garnish and coat the rolls

  • Parsley to garnish

  • Yogurt ranch for dipping or leftover marinara sauce (optional)

Directions: Pull out egg roll wrappers to defrost. Then in a mixing bowl, add the cheese, pepperoni, sauce and thyme and oregano. Mix and set aside. Pour your oil in a pan and let it heat up to 350 F°. Lay down your egg roll wrapper and coat one side with the olive oil. Then cut in half, flip over and fill about a spoonful of the mix. Similiar to how you would roll and egg roll, fold the corners in and then roll. Tuck the ends and roll. Put the roll into parmesan and set aside. Once you have three done and oil is ready add to fryer.

Cook for about a couple minutes till you start to notice it browning then flip. Set them on wire rack and set aside. Repeat till all the mix filling is gone. For extra crunch I would bake them for about 10 minutes at 400 °F.

Then garnish and add your favorite dipping sauce, enjoy!
