Feta Shrimp & Roasted Brussel Bowl with Coconut Rice

A perfect weekday dish FULL of flavor and enough to fill some bellies!

I LOVEEE this dish! I seriously could not eat enough of it, I honestly could opt out of the potatoes and eat everything else but if your feeding someone else who needs a little more to help fill them up then keep them. (aka my husband) LOL If I fed this to him without the potatoes he would probably need a snack an hour later haha, but good either way!

You can also opt out of the goat cheese, I just tried it this time because we had leftover and it was delish with it.

Time cook: 40 minutes

Ingredients

  • The Bowl

    • 3/4 to 1 lb of shrimp, peeled and deveined

    • 1/3 white onion, chopped

    • 4 gloves of garlic, chopped

    • 4 mini assorted bell peppers, chopped

    • Salt and pepper to taste

    • Dash of smoked paprika

    • Dash of tarragon

    • Olive oil to coat pan

    • 1/2 lemon, squeezed and garnished

    • Capers to garnish

    • garlic chili paste to garnish (optional)

  • The Rice

    • 1 can of light coconut milk

    • 3/4 cup of jasmine rice

    • 1/2 cup of water

  • The Roasted Brussels

    • Cut in half

    • Seasoned with salt and pepper

    • Coated in olive oil

  • The Sauce

    • 8 oz od feta

    • 2-3 roma tomatoes (or 1 can of diced tomatoes, drained)

    • 2 tablespoons of dried basil

    • Few dashes of olive oil

Directions: In a large saute pan add the garlic, olive oil, and onion. Cook on medium till translucent. While these are cooking prepare the brussels and the rice. Pre-heat oven to 375 F° and bake brussels for 20 minutes with faces down on olive oil coated baking sheet. Once those go in begin on the rice. Add the coconut milk and rice and cook on medium.

Then, in a blender add the ingredients for the sauce and mix till some what smooth. It will cook down in the sautee pan once ready. Set aside. Monitor the rice and add water when needed.

Once the onions and garlic are cooked add the peppers for about 5 minutes, then add your shrimp. Cook uncovered for a couple minuted on medium then turn to medium low and cover till ready to add other ingredients.

Once the brussels are done and rice. Add the sauce to pan and mix. Add all seasoning and lemon juice. Then add the rice and brussels at the end. Garnish and enjoy!
