Cauliflower Steaks
Hearty, yet light in calories and healthy!
A friend of mine recently made cauliflower steaks for my husband and me and was instantly sold, wanted to try and make myself so here it is! I tried to add some diverse flavors together to see how it would taste and it was SO delicious, you are going to love this dish. Perfect for a meatless Monday meal.
I served this with a caesar salad and then used the leftover pesto sauce and put over angel hair heart of palm, called Palmini.

Ingredients
Cauliflower Steaks
1 head of cauliflower, leaves, and stem trimmed
2 tablespoons of pesto sauce
1 tablespoon of ghee
1 garlic clove, minced
Few dashes of oregano
Few dashes of paprika
Few dashes of cumin
1 lemon, squeezed
Parmesan to garnish
Red pepper flake to garnish
Fresh green onion to garnish
Dill Dip
1/2 squeeze of lemon
1 teaspoon of garlic
1/3 cup of greek yogurt
3 fresh sprigs of dill
salt and pepper to taste
Directions: First pre-heat the oven to 400° F. Cut your cauliflower in about 1/2 inch thick, brush the cauliflower with ghee and then the pesto sauce. Add the seasonings on top and lay cauliflower steaks down on parchment paper.
Make one side for about 30 minutes. Flip and cook the other side for about another 20 minutes. For the last 10 minutes sprinkle the parmesan. Then once cauliflower steaks garnish with fresh lemon squeeze, red pepper flake and green onion.
For the dill dip just mix all ingredients together and set a side.
