Chorizo & Egg Hash

This hash is perfect for brunch!

I’ve been wanting to try a hash, and I absolutely LOVE chorizo so thought this combination would be good and it sure was! You honestly can never go wrong with chorizo, potatoes, egg, bacon and cheese!!

If you want to opt out of the salsa because you aren’t a fan of the tomatoes you can try doing more chipotle pepper approach, but I always put also on my chorizo egg tacos so thought why not just cook with it.

Servings: 2-4

Time cook: 1 hour

Ingredients

  • 1 link of chorizo

  • 1 onion, chopped

  • 1 bag of shredded potatoes

  • 1 cup of medium heat salsa

  • 2 slices of bacon

  • 2 cups of shredded mexican cheese

  • 3 eggs (add more if serving more)

  • Salt and pepper

  • Parsley to garnish

  • 2 tablespoons of plant-based butter

Directions: In a sautee pan add the onion and the butter. Cook for a few minutes on medium high heat and then add the salsa, then cook for another 10 minutes then add the bacon. Cook for another 10-15 minutes then add the chorizo, chop it up. turn heat down to medium-low and cook for about 15 minutes. Once that is cooked add in the shredded potatoes. Cook until potatoes start to crisp, turn off heat then add cheese, set aside. In a cast iron skillet. Turn on medium high heat and spray pan. Put the hash around all the sides then crack the eggs in the middle and cook, cover for about a couple minutes then season with salt, pepper and parlsey.
