Recipe Below:
Swordfish Milanese is basically breaded swordfish with a yummy sauce on top. I like to serve with a vegetable since the swordfish is fried.
Swordfish
4 swordfish steaks
1 1/2 cup of panko
1 1/2 cup of potato chips, crumbled
3 eggs
Salt/Pepper
3 tablespoons of butter
Capers to top
1/2 cup of olive oil
Dill Pickle Tartar Sauce
1 cup of mayo
1/4 cup of pickles, chopped
2 tablespoon of fresh dill, chopped
2 tablespoon of dill pickle juice
Salt/Pepper to taste
To start, get a mallet and pound the swordfish in a bag till it’s thinner. Add potato chips and panko crumbs together in one bowl. In another bowl add the eggs, whisk. Dip the fish into the egg wash, then the crumbs, then repeat. Add in the oil and butter into a saute pan, once melted add in the swordfish steak, two at a time. Once golden brown flip to other side and then place on wire rack so it doesn’t get soggy.
For the sauce, combine all ingredients and salt/pepper to taste. Add sauce on top of swordfish and add capers. Put a few lemons on the side and then your swordfish steaks are ready to eat!
