Lemon Chicken

One of my favorite recipes! Brighten up your chicken with this recipe.

One of my favorite chicken marinates and chicken! The longer you marinate it, honestly the better! Soaks up all that lemon juice and fresh herbs. But you really only need 6 hours, usually do overnight just because it is easier to do the night before.

You can use normal butter, but I just use plant-base alternative! You can also try some herbs, maybe add some oregano, I do like to add some siracha and garlic chili paste at the end, but that is because I always love

Servings: 2-4

Time cook: 6+ hour marinate, 45 minute cook time

Ingredients

  • 2 - 4 chicken breasts

  • 5-8 rosemary sprigs

  • Plant-based butter

  • few dashes of olive oil

  • 1 teaspoon of sugar

  • 1 cup of lemon juice, fresh

  • 1 lemon, sliced

  • Salt and pepper

  • Few dashes of dried thyme

  • Parsley to garnish

Directions: First you need to marinate your chicken. In a bag or bowl, put lemon juice, olive oil, sugar, 1/2 cup of water and a few rosemary sprigs. Let it sit for 6+ hours. Then pre-heat the oven to 350° F. Line pan with aluminum foil, make sure it is coated. with spray. Season chicken with thyme, salt, pepper, then place on pan. Put the lemon slices on top then add the butter and then rosemary on top. Bake for 40-45 minutes.
