Shrimp & Wagyu Sausage Cajun Pot

Your pot, your ingredients!

Got a craving for seafood boil, but don’t feel like nor have the pot to do one? You might just find yourself satisfied with this reconstructed pot! You can honestly add any ingredients you want, I chose the below because they are some of my favorite ingredients in boil. For the broccolini it does do well absorbing spice and juice but also so does brussel sprouts if you want to sub with that.

You can also do traditional andouille sausage but I just love this wagyu jalapeno sausage I get from a local butcher shop by us. You can add other seafood, honestly more seafood the better but I found all these flavors worked wonderful together and I think you might find so as well!

Time cook: 1 hour

Ingredients

  • 1/2 lb of shrimp, peeled but leave tails on and deveined

  • 1 link of wagyu jalapeno cheddar sausage

  • 1 hatch chile, chopped

  • 1 russet potato, cut into wedges

  • 4 garlic cloves, whole

  • 2 corn on the cobs, cun into 3 so total 6

  • 1 bunch of broccolini, ends chopped

  • 1/2 onion, quatered

  • 1 zucchini, sliced

  • Old bay, honestly I use ALOT so just add to taste, I used probably 3 or more tablespoons

  • Lemon to taste, I used about 3 large lemons

  • Olive oil

  • 3-4 tablespoons of butter

Directions: pre-heat oven to 350 F°. Coat with olive oil. In a bowl toss the garlic, onion, hatch chile, corn and zucchini with old bay and lemon juice. Toss then put on cookie sheet. bake for 20 minutes and then turn up to 375 F° and cook for another 5-10 minutes. (add the sausge on a separate sheet or same at this time to cook as well)

For the potatoes turn your air fryer to 390 F° at 20 minutes. Toss the russet potatoes with the old bay and lemon juice. Place in air fryer and coat with olive oil.

In a cast iron pan, coat with olive oil and add the broccolini with lemon juice, a little bit of other butter and old bay. cook for a few minutes on medium heat then cover and turn on medium low for 10. Then add the shrimp and add more seasoning, turn on low and cover till ready to add other ingredients.

Once all ingredients are done add the cast iron pan, toss. Add the butter in the middle and then the lemon wedges! I served the fries on the side but you can probably tuck them into the pot.
