Chana Saag

Served this curry with a side of garlic naan, was amazing! Can sub rice or other side.

This vegetarian recipe is so delicious! I was inspired by the typical chana saag but made some personal tweaks that I thought elevated the flavor a little bit more.

Time cook: 40 minutes

Ingredients

  • 1 15oz. can of chick peas, drained 

  • 1 tomato, diced 

  • 1 can of coconut milk

  • 1 onion, diced

  • 1 lb of frozen spinach 

  • 2 tablespoon of garlic, minced 

  • 2 tablespoons of curry 

  • 1/2 cup of chicken bone broth 

  • Dash of cayenne pepper

  • 1 teaspoon of cumin 

  • 1 tablespoon of ginger 

  • ew dashes of tumeric

  • olive oil to coat pan

  • salt to taste 

Directions: Sauté onion, garlic and chick peas until chick peas start to soften. Takes about 5-10 minutes. Then add all the other ingredients and cook on medium for about 20 minutes then cook on low till ready to serve! Heat up garlic naan to have on side or rice.
