Beyond Creamy Mushroom Gnocchi

Vegetarian and satisfying.

This recipe is perfect for a quick night meal. I usually use the sauce to put over gnocchi which I recommend because it is delicious, but also you can do spaghetti squash or other healthy more low carb substitutes. It is so yummy though, I honestly could just eat the sauce by itself!

You also could add heavy cream to thicken up or coconut milk but I think the greek yogurt helps enough.

This beyond creamy mushroom gnocchi recipe feeds about 3 people. Time cook: 40 minutes

Ingredients

  • 1 lb beyond meat, chopped

  • 1 pack of gnocchi (or 1 spaghetti squash as more of a low carb option )

  • baby bella mushrooms, sliced

  • 1/3 onion, diced

  • 1 tablespoon of garlic, minced

  • 1 tablespoon plant-based butter

  • Dash of milk (2% lactose-free is what I used but you can use any milk of your choice)

  • 2 tablespoons of greek yogurt

  • 2 tablespoon of light sour cream (can use alternative here)

  • 1/2 tablespoon teaspoon of oregano

  • 1/4 cup olive oil

  • 1/2 tablespoon of thyme

  • Salt and pepper to taste

  • 1/2 lemon, squeezed

  • Couple dashes of parmesan

  • Parsley, to garnish

Directions: In a medium sauce-pan, add the onion, olive oil and butter., cook on medium-high heat Let the onions cook for a few minutes until translucent. Then add garlic. Cook for another few minutes. Add your beyond beef meat, mushrooms, oregano, thyme, salt and pepper, lemon, cover and let simmer for about 10-15 minutes. While this is cooking cook your gnocchi accordingly.

Once the mushrooms are cooked, turn heat to low and add the greek yogurt, milk and sour cream. Cover and cook for another 10 minutes. Then serve up and add parmesan and parsley.
